Roasted Garlic Cauliflower "Mashed Potatoes"
Okay, so I’m slightly behind the whole cauliflower for everything craze, but better late than never. This roasted garlic cauliflower “mashed potatoes” recipe is so good, I even fooled my hubby! Yep, that’s right, he thought they were potatoes! Now there’s a win-win for ya!
I mean, we ALL pretty much LOVE mashed potatoes right? The only problem is, they are very high in carbs, and even though potatoes have some pretty amazing health benefits, in my mind, they don’t overcome the whole carb thing, because the carbs in potatoes are almost immediately transformed into sugar, and giving a blast to my blood sugar is NOT something I want or need in my life!
Pair this with my super healthy gravy and you will have your taste buds singing hallelujah!

Roasted Garlic Cauliflower Mashed "Potatoes"
- 1 cauliflower large head
- 2 C vegetable broth
- 4 cloves roasted garlic
- kosher salt to taste
- fresh ground black pepper to taste
- Separate cauliflower florets and cook in vegetable broth until very soft
- Drain cauliflower in colander for 5-10 minutes
- Add cauliflower and garlic to food processor and blend until smooth
- Serve warm with your favorite healthy gravy
