I love beets, but my Richie, not so much.  That is until I whipped up a batch of these roasted beets.  There’s something magical about roasting veggies!  It brings out the delicious sweetness of them, especially beets which are considered a “sweet” vegetable.

Not only are beets delicious, but they are very good for you!  The first clue you can get about the nutrition and benefits of beets comes from their beautiful deep red color.  The deeper the color of a vegetable or fruit, the greater the antioxidant and nutrition value.  That’s why it’s important to put a rainbow of colors on your plate every single day!

Beets also help your body detoxify, which helps your liver and your kidneys.  Beets are also great for improving brain function.  Another great benefit of eating beets is that they are loaded with fiber, so they promote weight loss as well as improved digestive health.

Ingredients

  • 3 fresh beets
  • 1 TBSP coconut oil melted
  • kosher salt to taste
  • fresh ground black pepper to taste

Instructions

  • Preheat oven to 400 degrees and line a baking sheet with parchment paper
  • Peel beets and cut into 2 inch size pieces. Season with salt and pepper to taste
  • Roast for 15-20 minutes until beets are tender
