Gluten-Free Banana Bread

One of my Richie's favorite things is banana bread!  I admit, I super love it too, but since I've stopped using regular (gluten) flours, I haven't made it.  Shame on me!  This banana bread is so moist and delicious, you will NEVER know that it's gluten-free!  That's the really cool part, because you can feed it to your family and they'll be singing your praises too!

The flour used in this recipe is not your normal gluten-free blend, but rather, fiber rich almond flour.  If you've been following me, you already know how I feel that it is the amount of fiber in our diet that will heal us, help us to lose weight and most importantly, maintain that weight.

Ingredients
  • 2 1/2 C almond flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 tsp fresh ground nutmeg
  • 1/2 tsp kosher salt
  • 3 bananas ripe
  • 1 tsp pure vanilla extract
  • 3 organic pasture-raised eggs
  • 1/3 C raw honey
  • 1/4 C plain Greek yogurt
  • 1/2 C walnuts finely chopped

  • 2 1/2 C almond flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 tsp fresh ground nutmeg
  • 1/2 tsp kosher salt
  • 3 bananas ripe
  • 1 tsp pure vanilla extract
  • 3 organic pasture-raised eggs
  • 1/3 C raw honey
  • 1/4 C plain Greek yogurt
  • 1/2 C walnuts finely chopped

Instructions
  1. Preheat oven to 350 degrees. Prepare large loaf pan (9X5). Grease with butter or coconut oil and line with parchment paper
  2. In large mixing bowl, whisk dry ingredients until well combined
  3. In medium mixing bowl, mash banana and whisk in the remaining wet ingredients
  4. Add wet ingredients to dry ingredients and mix until thoroughly combined. Fold in walnuts
  5. Pour into prepared loaf pan. Bake for 50-60 minutes, until toothpick inserted in center comes out clean
  6. Allow to cool in pan. Slice and enjoy!
