Gluten-Free Banana Bread
One of my Richie's favorite things is banana bread! I admit, I super love it too, but since I've stopped using regular (gluten) flours, I haven't made it. Shame on me! This banana bread is so moist and delicious, you will NEVER know that it's gluten-free! That's the really cool part, because you can feed it to your family and they'll be singing your praises too!
The flour used in this recipe is not your normal gluten-free blend, but rather, fiber rich almond flour. If you've been following me, you already know how I feel that it is the amount of fiber in our diet that will heal us, help us to lose weight and most importantly, maintain that weight.
