I happen to love tuna salad sandwiches, but I understand that not everyone shares that particular taste bud.  However, I challenge you to try this Mediterranean Tuna Ciabatta.  It is absolutely delicious!

This recipe is the day three (3) lunch main dish recipe of my 7-Day Meal Plan program. I created the program because after researching the meal plan program provided by a recognized authority on diabetes, I was appalled at the ingredients and nutrition values.

For the Filling

  • 2 Italian Tuna in Olive Oil 6 oz cans
  • 1 Tomato chopped
  • 1 jar Artichoke Hearts packed in water, chopped
  • 2 Tablespoons red onion minced
  • 2 Tablespoons Lemon Juice 1/2 of a lemon
  • fresh ground pepper to taste
  • Arugula
  • 1 Ciabatta Bread loaf

For the "Mayo"

  • 1/4 C Plain Greek Yogurt
  • 3/4 Cup Kalamata Olives pitted, chopped
  • 2 cloves Garlic chopped
  • 1 teaspoon Lemon Zest


  • Slice the ciabatta bread loaf in half lengthwise and hollow out the center to make room for the filling.

For the "Mayo"

  • Add olives to food processor
  • Coarsly chop garlic and add to food processor
  • Add lemon zest to food processor. Pulse until everything is minced fine
  • Add yogurt to a small mixing bowl, add olive mixture and mix to combine

For the Filling

  • Fully drain tuna, add to small mixing bowl

  • Drain and chop artichokes, add to bowl
  • Squeeze juice from 1/2 of lemon into your bowl and mix to break up some of the tuna chunks
  • Add fresh ground black pepper

To Assemble

  • Chop tomato
  • Spread olive "mayo" on both sides of the bread, top with tuna and artichoke mixture, top with chopped tomato and arugula.
  • Slice loaf in to 6 equal portions and enjoy!


If you don't care for arugula, you could totally use romaine lettuce instead.
