Mediterranean Sausage and Peppers

Something we really love is sausage, especially kielbasa.  Problem was, up until now, I only had a couple of ways that I know how to cook it.  You know, the traditional way with sauerkraut or cabbage?  Well, let me just tell you, that the Mediterranean flavors in this dish will totally blow your taste buds away!  You may never be able to go back to the old way ever again!

Yes, you heard that right!  The addition of the Greek seasoning paired with the bell pepper, onion and garlic, well, let’s just say that something magical happens.

The other really cool thing about this recipe is that it is perfect for your meal prep options.  Simply slice the kielbasa and veggies, mix the seasoning and the oil, pop everything in a freezer bag and massage it around to get the seasoning all over everything, then pop it in the freezer.  It will keep nicely for about a month.  Just make sure that you thaw it completely before you cook it.

  • 1 kielbasa or Andouille or Chorizo sausage, sliced
  • 1 large onion sliced
  • 1 red bell pepper sliced
  • 2 cloves garlic minced
  • 2 TBSP pure organic grapeseed oil
  • 2 TBSP Greek seasoning


  • Heat oil in skillet over medium heat
  • Add remaining ingredients to skillet and saute for 15-20 minutes until veggies are tender and sausage is cooked through.


This is a great freezer meal.  Prep all ingredients, place in ziplock bag and freeze for up to 1 month.
Thaw completely before cooking.
This dish would pair great with my roasted Brussels sprouts.
