Lemon Coconut Protein Balls
When it comes to a healthier eating lifestyle, what to do about snacking can become a little confusing. One thing to keep in mind is that if protein is part of that game plan, you can usually come out with a much healthier decision. That healthy element of snacking brought me to this recipe for these delicious Lemo Coconut Protein Balls.
In my opinion, any healthy snack choice would include zero refined sugar, zero conventional highly processed flour and would instead include healthy fats, protein and whole grains.
In the case of these protein balls, there is zero flour. zero sugar and in fact are gluten free as well, so they are a delicious option for anyone!
They come together in about ten minutes from start to finish and can easily satisfy your sweet tooth while providing great nutrition as well.
There are several reasons why these Lemon Coconut Protein Balls are rich in nutrients. The cashews provide great protein, antioxidants, vitamins and minerals.
The lemon is another big contributing factor to their nutrition. First of all, lemons have the most vitamin C of any other food. More amazing benefits of lemons are that they are responsible for aiding in digestion, they greatly aid your liver in detoxification, and they also help your body to metabolize fats, which is why they are so good at stabilizing your blood sugar and helping you to release weight.
I’m super excited to create this recipe, that to me tastes like lemon cookies (which are one of my faves). I am after all, much more of a cookie monster than any other sweet. Oh, okay, I really like pie too.
Lemon Coconut Protein Balls
- 1 1/2 C roasted cashews
- 1/4 C unsweetened coconut
- 1 packet Sustain Protein Powder
- 1/4 C fresh lemon juice
- 1 zested lemon
- 1 TBSP coconut oil
- Place cashews in food processor and process until they are a fine crumb
- Add coconut to processor and pulse to shred fine
- Add remainder of ingredients and pulse until combined
- Roll in to 1 inch balls, place on parchment paper on plate and freeze for about 20 minutes
