Honey Roasted Cashews
Ok, I admit it! The snack monster chases after me most nights too! So what’s a girl to do? Well, the first thing I do is toddle into my kitchen and whip up a batch of these seriously delicious Honey Roasted Cashews!!!
They are decadently sweet, but by using natural sugars and paired with the protein from the cashews, there’s no spike in my blood sugar.
Speaking of protein, yup, cashews are loaded, plus they also provide abundant amounts of anti-oxidants, vitamins and minerals. They are also great for brain health! Don’t know about you, but keeping my brain function healthy is something I’m seriously interested in!

Honey Roasted Cashews
Ingredients
- 3 C raw cashews
- 1 T raw honey
- 1 T pure maple syrup
- 1 T coconut oil
- 1/2 tsp kosher salt
- 1 tsp vanilla
- 1/2 tsp cinnamon
Instructions
- Preheat oven to 350 degrees. Line a baking sheet with aluminum foil for easy cleanup.
- In small saucepan, combine honey, maple syrup and coconut oil and cook until coconut oil is melted (about 2 minutes)
- Add salt, vanilla and cinnamon to honey mixture and stir to combine
- Place cashews in a medium bowl and pour the honey mixture over the nuts and stir (I use my hands) to coat thoroughly
- Place nuts on baking sheet and spread out to form a single layer.
- Bake for approximately 6 minutes, remove sheet from oven, stir nuts and place back in oven for another 6 minutes (approximate), until cashews are a nice golden color.
- Cool and store in an airtight container.
