In my past life, glazed carrots would have been made using corn syrup. Delicious for sure, but as we all know, totally NOT healthy!
Enter the yummy goodness of local raw honey! All the sweetness, none of the guilt. Welcome back to that table honey glazed carrots!
Not only are carrots good tasting, they are very good for you. While a lot of diabetics think that they cannot eat carrots because they are considered a “sweet” vegetable, the opposite is actually true.
One cup of raw carrots contains about 10 grams of carbohydrate and almost 4 grams of fiber. The fiber in carrots helps slow down the release of sugars, in the form of glucose, into the bloodstream. I have said many times, that I believe the number that should be counted on a regular basis is NOT calories or carbs, but fiber.
However, nutrition is very personal, so you should always test. That being said…..

Honey Glazed Carrots
- 4 organic carrots sliced on the diagonal
- 1/2 C celery diced
- 2 TBSP unsalted organic grass-fed butter or ghee
- 1 tsp raw honey
- kosher salt to taste
- fresh ground black pepper to taste
- Melt butter in medium skillet, add carrots and celery, season with salt and pepper to taste
- Cook until carrots are crisp tender, stir in honey. Serve immediately
