Ingredients

For the Shrimp

  • 1 Tablespoons extra virgin olive oil
  • 8 raw shrimp peeled & deveined
  • kosher salt to taste
  • fresh ground black pepper to taste

For the Dressing

  • 1/4 C olive oil extra virgin
  • 1 teaspoon lemon zest
  • juice of one lemon
  • 1 tsp fresh oregano chopped fine
  • 1 tsp fresh sage chopped fine
  • 1 Tablespoon fresh chives chopped fine
  • 1 Tablespoon fresh parsley chopped fine
  • kosher salt to taste
  • black pepper to taste

For the Salad

  • 1 15 oz cans cannellini beans drained & rinsed
  • 10 cherry tomatoes halved
  • 4 C salad greens spring mix

Instructions

For the Shrimp

  • Toss shrimp with olive oil, salt and pepper
  • Place on grill
  • Cook 3-4 minutes, flip and cook an additional 2-3 minutes, till pink and cooked through

For the Dressing

  • Combine all ingredients and whisk to emulsify

Assemble the Salad

  • Place salad greens on plate, divide the shrimp, beans and tomatoes between the plates, drizzle with dressing and serve

Notes

Alternatively, you can cook the shrimp in a skillet
