Grilled Chicken Caesar Salad

Is a super delicious, nutritious, filling and slightly decadent lunch (or dinner) option.

What takes it over the top from being a healthy choice are the anchovies and the mayo in the dressing.  So, we’ve eliminated them here, but the awesome taste remains.  Oh yeah, the croutons have been eliminated too, sorry!

You could however, add in cucumber, carrot and some red onion if you’re looking to amp up the flavor just a little.  Plus, hey more veggies is a good thing!

Ingredients

For the Chicken

  • 1 TBSP extra virgin olive oil
  • 2 chicken breasts boneless, skinless
  • 1/2 tsp kosher salt
  • 1/4 tsp fresh ground black pepper

For the Salad

  • 6 Cups romaine lettuce chopped, approx 1 head
  • 1 oz Parmesan cheese shaved

For the Dressing

  • 2 garlic clove minced
  • 1/2 tsp Dijon mustard
  • 1 tsp white wine vinegar
  • 1 tsp fresh lemon juice
  • 4 TBSP extra virgin olive oil
  • kosher salt to taste
  • fresh ground black pepper to taste

Instructions

For the Chicken

  • Preheat grill pan over medium high heat
  • Pat chicken breasts dry with a paper towel, drizzle with olive oil and season lightly with salt and pepper
  • Grill chicken for 3 or 4 minutes, then turn and continue to grill for an additional 3 or 4 minutes, until chicken is cooked through and juices run clear. Inside temperature should register 180 degrees
  • Remove from pan and allow to rest, Then slice and set aside

For the Salad

  • Chop romaine lettuce and divide between two salad bowls.

For the Dressing

  • Mince garlic and anchovies, place in a small mixing bowl. Add remaining ingredients and whisk until emulsified.
  • Divide dressing between both bowls and toss to combine

To Serve

  • Arrange grilled chicken slices on top of salad and top with shaved parmesan cheese
  • Enjoy!
