Comforting Quinoa Porridge
One of the absolute best things you can do for yourself and your health is to start your day off with a great breakfast sans the sugar. That where this Comforting Quinoa Breakfast Porridge perfectly fits the bill.
It’s not only warm, spicy, and comforting, but quinoa, is also gluten-free.
The health benefits of quinoa are many, but the ones that I find most intriguing are that first of all, it is a gluten-free complete protein, containing all 20 of the essential amino acids that your body needs for optimum health, as well as maintaining or losing weight.
Other benefits include it being heart healthy, a great source of antioxidants that help to reduce free-radical damage and therefore may prevent cancer, it has nutrients that support a healthy gut and it also contains high amounts of manganese, which is essential for strong healthy bones, as well as prevention of diabetes.
All this means that you’ll be starting your day off right and you’ll be adding some blood-sugar stabilizing nourishment to your body that will provide you will sustained energy all the way through to lunch.

I’ve always had a really hard time eating breakfast, so when I started my new healthy lifestyle, that was one of the things that I HAD to fix, and boy am I ever glad I did. I no longer get those headaches around 10AM am and rushing to the coffee pot for a pick-me-up.

Comforting Quinoa Breakfast Porridge
- 1 C quinoa soaked
- 2 1/2 C water
- 1 teaspoon cinnamon
- 1 teaspoon pure vanilla extract
- 1 tablespoons raw honey (or coconut sugar)
- 1/2 C cashew milk (or other non-dairy milk)
- 1/2 C fresh blueberries
- 2 Tbsp walnuts
- Soak your Quinoa in 4 cups of water overnight in the refrigerator. In the morning, simply drain and rinse it.
- Put Quinoa and water in pot over medium high heat, cover and bring to a boil, then turn heat down to medium low and simmer for 15-20 minutes, until water has been absorbed.
- Stir in milk, cinnamon, honey and vanilla extract.
- Top with blueberries and walnuts. Enjoy!
