Cheesy Broccoli Casserole

Cheesy Broccoli Casserole

When it comes to adopting a healthy eating lifestyle, one of the things that’s hardest to do is to still enjoy the same family favorite recipes.  This broccoli casserole recipe is a total remake for my featured chef Ellen Hogg.

Ellen Hogg

On August 3rd, 2017 I was diagnosed with type 2 diabetes!

Coach Collette has been an amazing help to me, on my weight loss journey! I'm so thankful for all of her love and support!

Every year I make a broccoli casserole for the holidays. Since changing my way of eating, I wanted to make the casserole, a healthier side dish!

With the help of the Unconventional Foodie Club, we were all able to turn our favorite holiday recipes into healthier ones, and still enjoy them!

You know what’s even better?  Ellen has reported that this totally healthy remake version of her family favorite recipe is so delicious that her family likes it even better than the original!  Now that’s a HUGE win if you ask me!!!

Ellen’s recipe can be found on page 121 of the Healthy Holidays with the Unconventional Foodie cookbook that is available for purchase on Amazon and Kindle.  It is just one of the 52 delicious and healthy recipes!

Ellen was one of the Unconventional Foodie Club recipe challenge winners in the month of November, which gave her a featured spot here on the Holistic Happy Living website, as well as being included as a featured chef in the cookbook, and I couldn’t be more proud of her!
