When it comes to adopting a healthy eating lifestyle, one of the things that’s hardest to do is to still enjoy the same family favorite recipes.  This broccoli casserole recipe is a total remake for my featured chef Ellen Hogg.

Every year I make a broccoli casserole for the holidays. Since changing my way of eating, I wanted to make the casserole, a healthier side dish!

With the help of the Unconventional Foodie Club, we were all able to turn our favorite holiday recipes into healthier ones, and still enjoy them!

Ingredients

Instructions

  • Preheat oven to 350 degrees, prepare 9x13 baking dish
  • Cook broccoli and cauliflower according to pkg directions, drain
  • Saute onions in 1 TBSP of butter
  • In large mixing bowl, combine broccoli, cauliflower, mushroom soup, sauteed onions and cheese. Season with salt and pepper to taste
  • Transfer to baking dish, top with french fried onions and bake for 35-40 minutes until golden brown and bubbly
  • Serve immediately
