Broccoli & Kale Salad

I can’t even begin to tell you how delicious this broccoli and kale salad is!  And, yes, there’s a back story to this recipe.

This salad was one of the dishes prepared for our family dinner after my dear uncle’s memorial service.  I absolutely loved this broccoli and kale salad, and tried to find the person who had made it for us to get the recipe.

Unfortunately, I never did find out who made the salad, so when I was creating my cookbook, I know that figuring out this salad was a MUST!!  And, although this isn’t the exact salad that I was served, it is, as close as you can get from the remembrance of my taste buds.

This broccoli and kale salad packs a flavor and nutrition punch that can’t be beat!  I’m sure you’ll love it as much as I do!  Just as an FYI, I’ve also taken this salad to my church potluck dinner and it has gotten rave reviews there as well!

Ingredients

For the Salad

  • 2 C broccoli florets
  • 2 C fresh kale
  • 1 C celery diced
  • 1/2 C walnuts
  • 1/2 C dried cranberries
  • 1/2 red onion diced

For the Dressing

  • 1/2 C plain Greek yogurt
  • 2 tsp raw honey
  • kosher salt to taste
  • fresh ground black pepper to taste

Instructions

  • Chop broccoli and kale in small bite size pieces, dice onion and celery
  • Place all salad ingredients in serving bowl
  • Whisk together dressing ingredients, pour over salad and toss to combine. Serve immediately.
