Who doesn’t just LOVE a great piece of whole grain toast smeared with jam! I know I sure do! However, jam and jelly is something that I have had very little of in the last few years because it’s so full of sugar!
I’ve been missing it so much that I decided it was high time that I correct that problem by making my own super delish healthy version! Yep, you read that right! It’s super healthy and diabetic friendly. You can use it even if you’re on a low carb diet! YAY!!! LOVE that!!!
It’s a proven fact that berries in particular are a very smart choice when it comes to fruits. They are loaded with antioxidants, vitamin C, have fiber and lots of other amazing nutrients to help you heal. Plus, they are very low on the glycemic scale which means they help you to control your sugar cravings while also stabilizing your blood sugar!
- 2 C organic blueberries fresh or frozen
- 1/4 C water
- 1 TBSP fresh lemon juice (about 1/2 lemon)
- 1/2 C raw honey
- 2 TBSP chia seeds
- add all ingredients minus the chia seeds to a medium saucepan. Over medium heat, bring to a boil, then lower heat and simmer for 5-10 minutes, stirring often and smashing the berries till they are softened
- Remove from heat, stir in chia seeds. Allow to cool for 10-15 minutes, then place in airtight jar. Will keep in the fridge for about 7-10 days.
