Gluten-Free Banana Bread

One of my Richie’s favorite things is banana bread!  I admit, I super love it too, but since I’ve stopped using regular (gluten) flours, I haven’t made it.  Shame on me!  This banana bread is so moist and delicious, you will NEVER know that it’s gluten-free!  That’s the really cool part, because you can feed it to your family and they’ll be singing your praises too!

The flour used in this recipe is not your normal gluten-free blend, but rather, fiber rich almond flour.  If you’ve been following me, you already know how I feel that it is the amount of fiber in our diet that will heal us, help us to lose weight and most importantly, maintain that weight.

  • 2 1/2 C almond flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 tsp fresh ground nutmeg
  • 1/2 tsp kosher salt
  • 3 bananas ripe
  • 1 tsp pure vanilla extract
  • 3 organic pasture-raised eggs
  • 1/3 C raw honey
  • 1/4 C plain Greek yogurt
  • 1/2 C walnuts finely chopped


  • Preheat oven to 350 degrees. Prepare large loaf pan (9X5). Grease with butter or coconut oil and line with parchment paper
  • In large mixing bowl, whisk dry ingredients until well combined
  • In medium mixing bowl, mash banana and whisk in the remaining wet ingredients
  • Add wet ingredients to dry ingredients and mix until thoroughly combined. Fold in walnuts
  • Pour into prepared loaf pan. Bake for 50-60 minutes, until toothpick inserted in center comes out clean
  • Allow to cool in pan. Slice and enjoy!
