Particularly on Sunday, I enjoy making us a nice hearty breakfast.  These baked egg muffins are a delicious and healthy way to have a special Sunday morning

This recipe is the day seven (7) breakfast main dish recipe of my 7-Day Meal Plan program. I created the program because after researching the meal plan program provided by a recognized authority on diabetes, I was appalled at the ingredients and nutrition values.

  • 6 eggs
  • 2 TBSP water
  • kosher salt to taste
  • fresh ground black pepper to taste
  • 1 onion medium, minced
  • 1 green bell pepper chopped
  • 1 TBSP parsley chopped
  • 2 oz cheddar cheese grated


  • Preheat oven to 350 degrees
  • Chop onion, bell pepper and parsley
  • Grate cheese
  • In medium bowl, whisk eggs, water, salt and pepper until light and frothy
  • Spray muffin pan with cooking spray (I prefer coconut oil)
  • Divide the veggies and 1/2 the cheese between 8 muffin cups
  • Pour in egg mixture to 2/3 full
  • Top with remaining cheese
  • Bake for 15-20 minutes.
